Why Only Six Skewers? The Philosophy of Omakase Sequencing

An Omakase experience is not defined by abundance, but by intention. At Torikami, every skewer is thoughtfully selected and placed in a specific sequence, allowing guests to experience the changing flavours, textures, and aromas of premium yakitori throughout the course.

The six-skewer progression is designed to feel balanced rather than overwhelming. Each serving introduces a different expression of chicken, while the order allows the palate to gradually move from delicate and creamy notes toward deeper, richer flavours.

A Journey Through Six Distinct Flavours

The experience begins with Charcoal-Grilled Chicken with Echire Butter, where the richness of French Echire butter meets the subtle smokiness of charcoal. This opening skewer sets a refined yet comforting tone for the course.

Next comes Kashiwa, showcasing the natural tenderness and savoury character of chicken. The sequence then moves to Sunagimo, introducing a lighter, firmer and delicately crisp texture that creates a contrast with the previous skewers.

As the course progresses, Kata brings a deeper, more pronounced flavour to the palate. This is followed by Tebasaki, where the characteristic richness of chicken wing meets the aroma of charcoal grilling.

The final skewer is Tsukimi Tsukune. Tender chicken meatball is paired with egg yolk, creating a richer and more indulgent finish to the six-skewer progression.

Why Six Skewers?

For Torikami, six is not simply a number. It represents a carefully considered sequence in which each skewer has a role to play.

Rather than serving numerous skewers with similar flavours, the course focuses on contrast and progression. Tenderness gives way to texture, delicate flavours develop into richer notes, and the final skewer provides a satisfying conclusion.

This approach reflects the philosophy of Omakase: allowing the chef to determine not only what you eat, but also how the experience unfolds.

One Course, Six Expressions of Yakitori

From the creamy richness of Echire Butter to the delicate texture of Sunagimo and the depth of Tebasaki, each skewer contributes something different to the overall experience.

At Torikami, yakitori is approached as more than individual grilled skewers. The sequence is part of the dining experience itself — carefully paced, thoughtfully composed, and designed to let each ingredient speak for itself. Six skewers. One carefully composed journey.
